Banana Muffins or Bread

1 ¼ cups all purpose flour
1 tsp baking soda
1/2 tsp baking powder
3/4 cup granulated sugar
1 egg
1 egg white
1/4 cup lower fat plain yogurt
1/4 cup vegetable oil
1 tsp vanilla
1 cup mashed ripe bananas
(about 2-3 medium)


  1. In a bowl sift together flour, baking soda and baking powder. Set aside.

  2. In a large mixing bowl, blend sugar, egg, egg white, yogurt, oil and vanilla.

  3. Blend in bananas. Add dry ingredients; mix until just combined. Spoon batter into greased mini muffin tray. If banana bread is desired, pour batter into greased 9 x 5 inch or 2 litre pan.
  • Bake at 350 degrees F for approximately 8 minutes for mini muffins, 18- 22 minutes for larger muffins and for banana bread 1 hour or until tester inserted in center of loaf comes out clean.
