Chicken Tabouleh Salad

1 cup cooked bulgur wheat
1 cup chopped cooked chicken
1 tomato, chopped
1/4 cup parsley
1/4 cup chopped cucumber
2 tbsp chopped green onions
1/4 cup vegetable oil
1/4 cup lemon juice
1 clove garlic, minced
1/2 tsp salt
1/4 tsp pepper

  1. Place cooked bulgur wheat in a large bowl. Add chicken, tomato, parsley, cucumber, and onion.
  2. In a small container with lid or salad dressing jar, combine remaining ingredients. Shake dressing well. Pour dressing over bulgur mixture.
  3. Toss salad. Pack in airtight container and store in refrigerator until ready to use.
