Hurry Up Fill Me Up Burritos

These are popular after school snacks for hungry teenagers and they can make them themselves.

If desired, add sour cream, shredded lettuce, and extra salsa. Use pre-packaged shredded cheese and leftover rice for even quicker preparation.

Ingredients
1 cup
(250 ml)
cooked rice
1 can
(398 ml,
14 oz)
kidney beans, rinsed
1 cup
(250 ml)
kernal corn
¾ cup
(175 ml)
prepared salsa
10 large
(10"/25cm)
flour tortilla (warmed)
1 ¼ cup
(300 ml)
shredded cheddar cheese

Yield: Makes 10 burritos
Preparation Time: 5 minutes

Stove Method

  1. Combine first four ingredients together in non-stick pan

  2. Stir over medium heat until warmed through, about 3-4 minutes

  3. Divide mixture evenly amongst tortilla; sprinkle with cheese

  4. Roll up tortillas

Microwave Method

  1. Combine rice, beans, corn and salsa in a medium bowl

  2. Divide mixture amongst tortillas; sprinkle with cheese

  3. Roll up

  4. Microwave on HIGH for 30-40 seconds or until heated through
